Perfectly Delicious Baked Salmon
This is a recipe you will cook over and over again once you have tried it. It is so easy, so quick and so absolutely, mouth-wateringly delicious, it will quickly become one of your favourites. We are big fans of Salmon in Tasmania, given we have some of the best salmon in the world grown right on our doorstep. All you need is a good quality side of Tasmanian Salmon with a few simple flavours and you have a meal to write home about.
Perfectly Delicious Baked Salmon with Pepperberry Salt and Lime Butter
Ingredients
- Olive Oil
- 1 - 1.5 kg side of Salmon, skin on
- 3 tbsp butter, melted
- juice and zest of one lime
- one lime, sliced
- Tasman Sea Salt's Pepperberry Salt Mix
- fresh parsley, chopped
Method
- Preheat your oven to 180 celsius
- Take a piece of foil large enough to wrap around your side of salmon and place it on a flat baking tray. Spread a little olive oil over the foil (where the side of salmon will sit, to stop the salmon from sticking) and place the side of salmon on top
- Combine melted butter, lime zest and juice in a bowl
- Place slices of lime down the centre of the side of salmon.
- Drizzle the butter mixture over the salmon
- Sprinkle lightly with Pepperberry Salt Mix
- Enclose the salmon in the foil and place into the oven
- Bake for approx 15-20 mins or until salmon is tender and pulls apart with a fork
- Open foil and cook for a further 5 mins
- Sprinkle with chopped parsley and a little more Pepperberry Salt Mix (if needed)
- Serve with a light salad or wild rice
